Pearl barley salad with hot smoked butterfish



Ingredients: 
pearl barley
cherry tomatoes
finely grated carrot
hot smoked butterfish
basil - for decoration

Dressing:
extra virgin olive oil
wine vinegar
pressed garlic
freshly ground pepper


Cook pearl barley and rinse under cold water as soon as they are ready.  Then just put all the ingredients into a  bowl. Than take a small bowl and mix all the ingredients for dressing. Mix it well with a fork and pour the finished salad. Garnish with basil. 


This salad is healthy and hearty. It will fill you with energy for a long time. That’s why I love to eat them in lunch when my battery need to be recharged. Bon appétit!
